  • 1 Tbsp. Olive Oil
  • 1 Yellow Onion (diced)
  • 1 Green Bell Pepper (diced)
  • 3 Cloves Garlic
  • 1 Cup Brown Lentils (rinsed)
  • 2 Cups Tomato Sauce
  • 2 Tbsp. Tomato Paste
  • 1 Tbsp. Maple Syrup
  • 1 tsp. Apple Cider Vinegar
  • 1 Tbsp. Soy Sauce
  • 1 tsp. Chili Powder
  • ½ tsp. Smoked Paprika
  • ½ tsp. Salt
  • ½ tsp. Black Pepper
  • 6 Whole-Grain Burger Buns

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the lentils, tomato sauce, tomato paste, maple syrup, apple cider vinegar, soy sauce, chili powder, smoked paprika, salt, and black pepper. Stir to combine.
  • Bring the mixture to a boil.
  • Reduce heat to low and simmer covered for about 20 minutes, or until the lentils are tender and the sauce has thickened.
  • Taste and adjust seasoning if necessary.
  • Spoon the lentil mixture onto toasted buns and serve immediately.
