  • 2 Cups Sweet Corn Kernels (fresh or frozen)
  • 1 Cup Vegan Cream Cheese
  • 1 Cup Vegan Shredded Cheese (ensure it melts well)
  • 2 Jalapeños (minced)
  • 1 Red Bell Pepper (diced)
  • ¼ Cup Green Onions (chopped)
  • 1 Tbsp. Garlic Powder
  • 2 tsp. Smoked Paprika
  • ½ tsp. Salt
  • ½ tsp. Pepper
  • 2 Tbsp. Olive Oil

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, add a splash of olive oil and sauté the red bell pepper and jalapeños until they start to soften, about 3-4 minutes.
  • Add the corn kernels to the skillet and cook for another 5 minutes until they are heated through and slightly charred.
  • Lower the heat and stir in the vegan cream cheese, vegan shredded cheese, garlic powder, smoked paprika, salt, and pepper.
  • Mix until the cheeses are melted and the mixture is well combined.
  • Transfer the mixture to an oven-safe dish and bake for 10-15 minutes, or until the top is bubbly and slightly golden.
  • Remove from the oven, let cool slightly.
  • Sprinkle with chopped green onions before serving and serve warm with tortilla chips or sliced veggies for dipping.
