- 3 Pieces Star Anise
- 5 Cloves
- 1 Cinnamon Stick
- 1 Onion (halved and charred)
- 1 oz. Ginger (~3-inch piece, halved and charred)
- 8 Cups Vegetable Broth
- 3 Tbsp. Soy Sauce
- 1 Tbsp. Maple Syrup
- 8 oz. Rice Noodles
- 2 Carrots (sliced)
- 2 Heads Baby Bok Choy (quartered)
- 14 oz. Firm Tofu (pressed and sliced)
Garnish
- 3 Sprigs Fresh Basil
- 3 Sprigs Fresh Cilantro
- 1 Lime (cut in wedges)
- 1 Jalapeño (sliced)
Instructions
- Toast the star anise, cloves, and cinnamon stick in a large soup pot over medium heat until fragrant, about 2 minutes.
- Char the onion and ginger.
- Add the charred onion and ginger to the pot along with the vegetable broth, soy sauce, and maple syrup.
- Bring to a boil.
- Reduce the heat and simmer for 45 minutes to allow the flavors to meld.
- Strain the broth and return it to the pot. Discard the solids.
- Bring the broth to a simmer again, add the rice noodles, carrots, baby bok choy, and tofu.
- Cook until the noodles are tender, about 10 minutes.
- Serve the pho hot, garnished with fresh basil, cilantro, lime wedges, and sliced jalapeños if desired.
