  • 4 Ears Corn (husked)
  • 1 Tbsp. Olive Oil
  • 1 Lime (zested & juiced)
  • 1 Lemon (zested & juiced)
  • 2 Tbsp. Cilantro (chopped fresh)
  • ¼ tsp. Chili Powder
  • ¼ tsp. Smoked Paprika
  • ½ tsp. Sea Salt
  • ¼ tsp. Black Pepper

Instructions
 

  • Preheat the grill or stovetop griddle over medium-high heat.
  • Brush the corn with olive oil and place it on the grill.
  • Cook for about 10-15 minutes, turning occasionally until the corn is lightly charred and cooked through.
  • Once grilled, let the corn cool slightly.
  • Using a sharp knife, carefully cut the kernels off the cob and place them in a mixing bowl.
  • Add the lime and lemon zest and juice to the bowl, tossing the corn to coat it evenly.
  • Sprinkle chili powder, smoked paprika, salt, and pepper over the corn mixture. Stir gently to combine.
  • Add chopped cilantro to the salad and toss once more to incorporate the flavors.
