- 2 Tbsp. Olive Oil
- 1 Onion (diced)
- 3 Cloves Garlic (minced)
- ½ Inch Fresh Ginger (minced)
- 4 Cups Vegetable Broth
- 14 oz. Coconut Milk (canned)
- 2 tsp. Thyme
- 2 tsp. Sea Salt
- ½ tsp. Black Pepper
- 1 Tbsp. Lemon Juice
Instructions
- Heat the oil in a large pot over medium heat.2 Tbsp. Olive Oil
- Add the aromatic ingredients, sautéing until the onions are translucent and fragrant, about 5 minutes.1 Onion, 3 Cloves Garlic, ½ Inch Fresh Ginger
- Add the carrots to the pot, stirring to coat them in the onion mixture.6 Carrots
- Cook for another 5 minutes.

- Remove from heat.
