Ingredients
 
 

  • 8 oz. Tempeh (thinly sliced)
  • 1 Tbsp. Soy Sauce
  • 1 Tbsp. Vegetable Oil
  • 1 tsp. Smoked Paprika
  • ¼ tsp. Garlic Powder
  • ¼ tsp. Onion Powder
  • 8 Slices Vegan Rye Bread
  • 1 Cup Sauerkraut (drained)
  • 4 Slices Vegan Swiss Cheese
  • ¾ Cup Vegan Russian Dressing

Instructions
 

  • In a shallow dish, whisk together soy sauce, vegetable oil, smoked paprika, garlic powder, and onion powder.
  • Add the tempeh slices, making sure each slice is well coated.
  • Let marinate for 10 minutes.
  • Preheat a non-stick skillet or griddle over medium heat.
  • Add marinated tempeh slices and cook for 3-4 minutes on each side until browned and heated through. Set aside.
  • Assemble the sandwiches by spreading a generous layer of dressing on one side of each bread slice. On four of the slices, layer the tempeh, sauerkraut, and vegan Swiss cheese. Top with the remaining bread slices, dressing side down.
    Try our Russian dressing if you want a little horseradish kick or thousand island dressing if you prefer something a bit sweeter!
  • In the same skillet or griddle used for the tempeh, cook each sandwich over medium heat for 2-3 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted.
  • Remove from heat, let cool slightly, and cut each sandwich in half before serving.
