Ingredients
 
 

  • 1 Cup Brown Rice
  • 1 Mango (diced)
  • 15 oz. Black Beans (1 can, drained and rinsed)
  • 1 Red Bell Pepper (sliced)
  • ½ Red Onion (sliced thin)
  • ¼ Cup Fresh Cilantro (chopped)
  • 2 Tbsp. Olive Oil
  • 2 Tbsp. Lime Juice
  • 1 tsp. Pure Maple Syrup
  • 1 tsp. Ground Cumin
  • ¼ tsp. Sea Salt
  • ½ tsp. Chili Flakes (for some optional spice)

Instructions
 

  • Cook the brown rice according to package or rice cooker instructions. Once cooked, set aside to cool slightly.
  • In a small bowl, whisk together dressing ingredients:
    2 Tbsp. Olive Oil, 2 Tbsp. Lime Juice, 1 tsp. Pure Maple Syrup, 1 tsp. Ground Cumin, ¼ tsp. Sea Salt, ½ tsp. Chili Flakes
  • In a large bowl, combine the cooked rice with the mango and veggies:
    1 Cup Brown Rice, 1 Mango, 15 oz. Black Beans, 1 Red Bell Pepper, ½ Red Onion
  • Drizzle the cilantro-lime dressing over the salad ingredients and gently toss to combine.
  • Sprinkle fresh cilantro on top and serve the Mango Rice Salad Bowls immediately, or refrigerate for later.
