  • 2 Tbsp. Olive Oil
  • 1 Onion (diced)
  • 1 Red Bell Pepper (diced)
  • 1 Jalapeño (seeded and minced)
  • 3 Cloves Garlic (minced)
  • tsp. Ground Cumin
  • ½ tsp. Smoked Paprika
  • 1 tsp. Dried Oregano
  • 4 Cups Vegetable Broth
  • 15 oz. White Beans (2 cans, drained and rinsed)
  • 4 oz. Green Chilies (1 can, diced)
  • 2 Cups Corn (frozen)
  • ½ tsp. Salt
  • ¼ tsp. Black Pepper
  • ¼ Cup Fresh Cilantro (chopped)

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the diced onion, red bell pepper, and jalapeño.
  • Sauté for 5-7 minutes, or until the vegetables are softened.
  • Add the minced garlic, ground cumin, smoked paprika, and dried oregano.
  • Cook for 1-2 minutes, stirring constantly, until fragrant.
  • Stir in the vegetable broth, white beans, diced green chilies, frozen corn, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes, stirring occasionally.
  • Once the chili has thickened, remove it from the heat and stir in the chopped fresh cilantro.
  • Serve the chili hot, garnished with your choice of toppings such as avocado, vegan sour cream, green onions, and/or tortilla chips. Enjoy!
