  • 1 Cup Arborio Rice
  • 2 Tbsp. Olive Oil
  • 1 Onion (finely chopped)
  • 2 Cloves Garlic (minced)
  • 4 Cups Vegetable Stock
  • 1 lb. Fresh Mushrooms (we love shiitake or oyster!)
  • 1 Cup Dry White Wine (optional)
  • 1 ½ tsp. Thyme (fresh if possible)
  • ½ tsp. Black Pepper
  • ¼ tsp. Sea Salt
  • 2 Tbsp. Nutritional Yeast

Instructions
 

  • In a large saucepan, heat the olive oil over medium heat.
  • Add the onion and garlic, sauté until the onion becomes translucent.
  • Add the mushrooms to the pan and cook until they have released their juices and are browned.
  • Season with thyme, salt, and pepper.
  • Add the Arborio rice to the pan and stir well, ensuring each grain is coated with oil. This helps to give the risotto its characteristic creaminess.
  • If using, add the white wine and stir until it is fully absorbed by the rice.
  • Begin to add the vegetable stock, one ladle at a time, stirring constantly. Allow each addition to be absorbed before adding the next.
  • Continue this process until the rice is al dente and creamy, approximately 30-40 minutes.
  • Stir in the nutritional yeast for an extra cheesy flavor.
  • Adjust the seasoning if necessary, then serve hot, ideally straight from the pan.
